Roll out the dough and use a large plate to cut to shape. Put a quarter of the filling mixture in the centre of the circle, egg wash all the way round then pull one side over to meet the other. Crimp the edges using your finger and thumb, brush all over with egg to glaze, then place on a baking tray. Repeat the process to create 4 perfect Cornish pasties.
Bake for 10 minutes, then turn down the heat to 180C/160 fan and cook for a further 45 minutes. Enjoy warm from the oven.
