A small wedge of butter
4 eggs
Cornish Sea Salt and Luxury Pepper
100g smoked salmon
1 lemon, cut into wedges

Instructions
Melt the butter in a small frying pan over a moderate heat until it's foaming. In the meantime, whisk the eggs in a bowl and season with Cornish Sea Salt and Luxury Pepper.
Cut four medium slices of your farmhouse loaf and put them under the grill to lightly toast on both sides.
Add the eggs to the pan, stirring occasionally with a wooden spoon or spatula, and cook until just before you think it’s perfect – the egg continues to cook when the heat is turned off so under cook them slightly and leave them in the pan while you butter your toasted loaf.
Serve the eggs on top of the toasted loaf, with slices of smoked salmon over the top. Add a good pinch of Cornish Sea Salt and Luxury Pepper along with a wedge of lemon.
