Summer Tomato and Goats' Cheese Open Tart


Serves 4



320g Sheet ready-rolled puff pastry
200g Soft goat's cheese
400g Mixed tomatoes, sliced
1tsp Cornish Sea Salt Smoked Sea Salt Flakes, plus extra to serve
Small handful oregano leaves (or basil)


This easy Vegetarian tart is bursting with summer flavours. Our Smoked Sea Salt Flakes are the perfect match to the sweetness of ripe tomatoes.


  • Preheat oven to 220°C (200°C fan). Unroll the pastry sheet and place on a baking sheet lined with baking paper. Mark a border of 1cm around the edge of the pastry (being careful not to cut all the way down). Spread the goat’s cheese inside the border.
  • Arrange the tomatoes on top of the goat’s cheese, overlapping slightly. Sprinkle over the Smoked Sea Salt Flakes. Bake in the oven for 25-30 minutes until the pastry is puffed and golden, and the tomatoes cooked.
  • Sprinkle with extra Smoked Sea Salt Flakes and oregano leaves to serve.
