•1.2kg beef brisket•1tsp Cornish Sea Salt Salt & Peppery
•1tsp Cornish Sea Salt Smoked Salt
•1tsp each garlic powder, onion powder, ground cumin, ground coriander and smoked paprika.
•1/2tsp Ancho chilli flakes (optional)

instructions
1. Pre-heat oven to 150ºC (130ºC Fan). Add all your rub ingredient into a bowl and mix together. Evenly sprinkle over your joint of meat and rub in.
2. Once evenly coated, cook in the oven for around 3 hours, if you have a thermometer, the inner temperature should reach 95ºC.
3. When your meat is cooked, leave to rest for approximately 5-10minutes. Slice and serve however you like.
