Great Big Greek Salad with Feta

Serves 2



1 block of Feta Cheese, diced
1 Cucumber, peeled and thickly sliced
6 Tomatoes, roughly chopped
2 Little Gem, roughly chopped
12 Fresh Mint leaves
1 tsp Cornish Sea Salt Lemon Pepper seasoning
1 tbsp Olive Oil



Add your chopped tomatoes, cucumber, feta, mint and little gem to a large bowl and evenly coat with Lemon Pepper seasoning and oil.

Gently toss the salad until it is covered in the oil and Lemon Pepper but be careful not to break up the feta cheese too much. Serve with grilled pitta bread.
